Built on a foundation of malted barley and wheat, it presents a luminous, hazy profile with a complex sensory architecture. The experience is led by a vibrant burst of lemon and juicy peach esters, seamlessly integrated with a rustic, phenolic spice. Local yarrow infusions introduce a unique herbal complexity that complements the subtle, woody structure provided by the oak. This mixed-fermentation Saison base finishes exceptionally dry and crisp, showcasing the transformative, fruity, and slightly funky influence of Brettanomyces alongside a refreshing, nuanced acidity.

Appearance. Pale gold to light amber (SRM 4-6) with a moderate to thick, rocky white head showing fair persistence and light lacing. Displays a slight to moderate haze consistent with wheat proteins and mixed fermentation.

Aroma. High intensity with prominent citrus notes of lemon zest and succulent stone fruit esters, specifically peach. A distinct spicy, herbal character from the yarrow infusion mingles with Belgian-style phenols.
