Rested Wind is an evocative Brett Beer that captures the ruggedness of an Arctic wild ale through sixteen months of barrel aging. The complex grain bill of barley, wheat, oats, and spelt provides a rustic, textured foundation for the brewery's signature foraged additions. Hefty amounts of yarrow and meadowsweet introduce distinctive botanical layers, reminiscent of wild Northern landscapes. On the palate, a gentle tartness intertwines with stone fruit character and the unique profile of bitter fruits. The result is a highly nuanced sensory experience where hay-like funk and floral sweetness are meticulously balanced by a dry, attenuated finish.

Appearance. Pours a hazy, pale gold to soft amber (5-8 SRM) with a fine-beaded, off-white head. The head retention is moderate, leaving delicate lacing, while the use of wheat, oats, and spelt ensures a persistent, natural cloudiness.

Aroma. Moderate to high intensity with prominent stone fruit esters and dried hay. Distinctive herbal notes of yarrow and meadowsweet provide floral, slightly honeyed, and medicinal nuances. Low earthy funk and a hint of seasoned oak from extended barrel aging complement the grainy, bready malt backdrop.

Taste. An initial tart impression transitions into complex flavors of bitter fruits and ripe peach. The yarrow and meadowsweet add a sophisticated botanical bitterness and a touch of floral sweetness. Malt character is bready and cereal-like but remains secondary to the high Brettanomyces attenuation. The finish is very dry and crisp, with lingering notes of rustic hay and subtle wood.

Mouthfeel. Medium-light body with a soft, slightly creamy texture derived from the oats and spelt. Moderate to high carbonation provides a lively, refreshing prickle on the tongue. Alcohol warmth is minimal and well-integrated, contributing to a smooth, elegant delivery.
