Raven’s Dawn is a sophisticated Brett Beer that harmonizes orchard fruit with wild botanical complexity. A captivating bouquet of ripe peaches leads the experience, underpinned by the rustic, herbal bitterness of locally sourced yarrow and the delicate floral tartness of meadowsweet. Five months of aging in oak lends a structured woody backbone and subtle tannins that integrate seamlessly with the dry, funky character of the Brettanomyces. The result is a vibrant, multifaceted wild ale where the stone fruit sweetness is balanced by a botanical snap, finishing crisp and evocative of a northern summer meadow.

Appearance. Deep gold to light amber (6–9 SRM); fine, white head with moderate retention and light lacing; slight haze typical of mixed fermentation.

Aroma. High intensity; prominent aromas of ripe peach and apricot; herbal notes of dried flowers and hay from yarrow and meadowsweet; moderate Brett funk featuring notes of leather and wet hay; subtle vanillin and toasted wood from oak aging.

Taste. Initial peach sweetness gives way to a complex herbal mid-palate; moderate bitterness from yarrow; light, non-lactic tartness from meadowsweet; very dry finish with lingering stone fruit and earthy Brett character; minimal malt presence with delicate oak tannins providing structure.
