A Lambic abban különbözik a legtöbb sörtől, hogy a Zenne-völgyben őshonos vad élesztők és baktériumok erjesztésével, nem pedig a gondosan tenyésztett sörélesztő-törzsekkel történik az erjesztés. Ez az eljárás adja a sör jellegzetes ízét: száraz, boros és almaboros, gyakran savanykás utóízzel. A típus a gyümölcsös változatai ismerősen csenghetnek. Az egyik a Framboise, mely málnával együtt savanyított sör valamint a Kriek, ami meggy hozzáadásával készül, de ezek mellett igen népszerű alapanyag az alma, szőlő és a szilva is.

Zes jaar lang hebben drie opeenvolgende brouwsels van maart 2017 gegist en gerijpt op één en hetzelfde eikenhouten vat. De fijne lambik werd afgevuld in een donkerbruine fles en afgewerkt met het beste kurk. Voor een nog langere kelderbewaring.
FR | La base et notre essence: le lambic tel qu’il devrait être: pur, spontané et complexe. Pendant six ans, trois brassins consécutifs de mars 2017 ont fermenté et mûri dans le même tonneau de chêne. Le lambic fin a été embouteillé dans une bouteille marron foncé et bouché avec le meilleur bouchon. Pour une conservation en cave encore plus longue.
