Collaboration with Little Pomona
Three part release in collaboration with our friends Little Pomona. All three use the same base beer but fermented with lees from a Little Pomona fermentation. That means that the only microorganisms which ferment and create this beer are those found on the skins of the apples from Little Pomona. It’s a little wild, a little funky, definitely has echoes of their cider, and was a lot of fun to collaborate in this way.
Speak No Evil – A beer fermented with lees from a Little Pomona fermentation, re-fermented with Dabinett apple pomace. Juicy apple, candied watermelon with gentle acidity and a soft finish.

Description Speak No Evil is one of a trio of beers Little Pomona have collaborated on with Deya in Cheltenham.
It began life as one of Deya’s wheat beers, before being fermented and conditioned with lees from one of Little Pomona’s spontaneous fermentations and aged in oak in the cellars of Deya. Finally, Speak No Evil was refermented on apple pomace for four weeks.
It’s a fascinating blend of flavours. Like an orchestra playing complex melodies but in a relatively understated way. Without doubts notes of apple spring up, alongside candied watermelon, a gentle acidity and a soft finish. 750ml. 6.3%.
