Sära is a vibrant Berliner Weisse that elevates the traditional German wheat base with a tropical trifecta of pineapple, papaya, and passion fruit. The sensory experience opens with a sharp, clean lactic tang that beautifully offsets the luscious, exotic sweetness of the added fruits. Pühaste's rendition maintains a classic bready, raw dough malt profile derived from Pilsner and wheat malts while leaning into a higher 5% ABV, providing slightly more structure than a standard session sour. The effervescent carbonation carries bright notes of tart citrus and succulent tropical stone fruit, finishing exceptionally crisp and refreshing with a lingering passion fruit essence.
Appearance. Pale straw to light gold (3-5 SRM) with a noticeable haze from the fruit additions and wheat. Pours with a large, white, frothy head that dissipates relatively quickly, leaving minimal lacing. Highly effervescent with visible rising bubbles.
Aroma. High intensity aromatic profile dominated by sharp, clean lactic acidity and a massive tropical bouquet of ripe pineapple and pungent passion fruit. Secondary notes of sweet papaya and a faint, doughy wheat malt character are present. No hop aroma or fermentation byproducts like diacetyl.
Taste. Initial impression is a brisk, clean lactic sourness that immediately gives way to intense flavors of tart passion fruit and juicy pineapple. The papaya adds a subtle, soft sweetness in the mid-palate, supported by a light bready, grainy malt backbone. Hop bitterness is undetectable, with the sharp acidity providing the primary balance. The finish is very dry and crisp, with a lingering tropical fruit tartness.
Mouthfeel. Light to medium-light body, feeling slightly more substantial than a traditional version due to the fruit solids and 5% ABV. High carbonation creates a lively, prickly sensation on the tongue. No alcohol warmth is perceived. Clean, refreshing acidity with no astringency.
