Cotton Candy Sunset is a vivid Wild Specialty Beer that captures a tropical horizon through the lens of lush mango and zesty passion fruit. The sharp, lactic tang of the wild fermentation is artfully softened by the addition of fudge candy, which introduces an unexpected layer of creamy, confectionery sweetness. This interplay creates a complex profile where the vibrant acidity of the passion fruit meets the velvety, stone-fruit richness of mango. The finish is a harmonious balance of tartness and a lingering, sugar-spun richness, reflecting a bold and textured approach to contemporary fruited wild ales.

Appearance. Opaque, deep golden-orange with a thick, mango-colored hue. Pours with a moderate, frothy, pale-yellow head that shows fair retention for a fruited sour, leaving slight lacing.

Aroma. High intensity tropical aromatics; fresh, pulpy mango and sharp, aromatic passion fruit dominate. A secondary sweet note of vanilla and caramelized sugar suggests the fudge candy, melding with a clean lactic tartness and a subtle, earthy funk characteristic of a wild fermentation.

Taste. An initial burst of tart passion fruit is immediately followed by the rich, fleshy sweetness of ripe mango. The mid-palate introduces a creamy, candy-like sweetness from the fudge candy, providing a smooth counterpoint to the acidity. Bitterness is absent (0 IBU). The finish is long and fruit-forward, balancing a crisp lactic snap with a lingering hint of sweet toffee.

Mouthfeel. Medium-full body with a notable creaminess and viscosity from the fruit puree and fudge candy. Carbonation is moderate, providing a lifting effervescence that prevents the sweetness from becoming cloying. Low alcohol warmth.
