Universal Consciousness is a vibrant Saison that integrates the rustic soul of a farmhouse ale with the vivid acidity of whole fruit. The mixed-fermentation process introduces a nuanced funk that weaves through intense layers of whole blackberries and tart raspberries. The fruity esters of the yeast are bolstered by the piquant brightness of the berries, all resting upon a lean, grainy malt base. This expression is defined by its extreme dryness and effervescent nature, delivering a sophisticated interplay of earthy spice and sun-ripened fruit that remains crisp, refreshing, and profoundly complex from start to finish.

Appearance. Pours a striking deep rose to ruby-purple with a slight haze from the whole fruit additions and lack of filtration. Features a persistent, rocky, pink-tinted white head with excellent retention and characteristic Belgian lace.

Aroma. High intensity. Bold, fresh aromas of tart raspberry and jammy blackberry lead the profile, supported by peppery phenols and a subtle earthy, leathery funk. Background notes of grainy malt and a faint floral hop character are present but secondary to the fruit and fermentation bouquet.

Taste. Initial impression is a sharp, refreshing tartness driven by the berries and mixed-culture acidity. Flavors of fresh-picked blackberries and raspberries transition into a spicy, black pepper yeast character. The malt provides a soft, grainy foundation that is quickly overtaken by a very dry, slightly tannic finish with a lingering, clean berry-skin aftertaste.
