Strix is a striking Berliner Weisse that pours an intense, deep blood-red. This sensory journey is dominated by a trifecta of Raspberries, Sour Cherries, and Sweet Cherries, providing a vivid berry punch that intertwines with a sharp, clean lactic acidity. Underneath the vibrant fruit, a delicate foundation of raw bread dough and grainy wheat malt provides structure. While slightly more robust than traditional examples at 5.1% ABV, it retains a refreshing, effervescent quality. The finish is bone-dry and crisp, leaving a lingering impression of tart stone fruit and floral berry notes that dance across the palate, balanced perfectly by a refreshing sourness.
Appearance. Deep ruby to blood red (20+ SRM) with a significant haze from the fruit addition. Large, fizzy, pink-tinted head that dissipates quickly, typical of high-acid beers, leaving minimal lacing.
Aroma. High intensity of sharp lactic sourness and fresh fruit. Bold aromas of sun-ripened Raspberries and the tannic snap of Sour Cherries dominate, backed by a subtle floral sweetness. A faint bready, sourdough-like wheat malt character resides in the background. No hop aroma is present.
Taste. A clean, aggressive lactic sourness strikes first, immediately followed by an explosion of tart Raspberry and black cherry flavors. The Sweet Cherries provide a rounded fruit depth without adding cloying sugar. A light, grainy wheat flavor supports the mid-palate. The finish is exceptionally dry and acidic, with zero hop bitterness and a lingering tart berry aftertaste.
Mouthfeel. Medium-light body with a crisp, refreshing acidity that prickles the tongue. Very high, effervescent carbonation. Despite the elevated ABV for the style, the alcohol warmth is negligible, keeping the focus on the vibrant fruit and sharp mouth-puckering sensation.
