This bold American Stout presents a complex sensory landscape shaped by six months in peated whisky sherry casks. High-intensity aromas of dark chocolate and espresso collide with a gentle veil of peat smoke and the floral, citrusy lift of Cascade hops. The palate is deeply layered, revealing decadent notes of honey, vanilla, and warm cinnamon that soften the aggressive roasted bitterness. Significant alcohol strength provides a luxurious warmth, while the sherry influence adds nuances of dried fruit. It concludes with a long, resinous, and smoky finish that balances the rich malt sweetness with assertive hop character.
Appearance. Jet black and opaque (40+ SRM) with a large, persistent, tan-to-light-brown head that leaves dense lacing.
Aroma. High intensity of roasted coffee and dark chocolate. Prominent peated smoke, honey, and vanilla notes from the cask aging. Low floral and citrus hop character from Cascade, with a hint of cinnamon and dark fruit esters.
Taste. Initial rich chocolate and caramel sweetness followed by intense roasted coffee and charred grain. Distinctive peat smoke and cinnamon spice are balanced by citrusy Cascade hop flavors. Medium-high bitterness leads to a lingering, dry, and slightly smoky finish with smooth alcohol presence.
Mouthfeel. Full-bodied and viscous with a creamy, coating texture. Moderate carbonation. Strong alcohol warmth is noticeable but well-integrated and smooth. Low roast-derived astringency.
