Overtone Brewing Co’s White Noise is a refined take on the classic Cream Ale, delivering a sparkling, lawnmower-ready experience. The addition of corn provides a delicate, grainy sweetness that defines the pale malt bill. This cereal-like foundation is elegantly accented by the use of Cluster and Cascade hops, which impart subtle layers of floral spice and a whisper of citrus. It presents a clean fermentation profile, finishing crisp and highly attenuated. This is a refreshing, smooth-drinking ale that balances the nostalgic character of American adjunct brewing with the precision of modern craft, resulting in a thirst-quenching, effervescent pint.

Appearance. Pale straw color (SRM 2-3). Brilliant, sparkling clarity with high carbonation. Pours with a low to medium white head that shows fair retention and light lacing.

Aroma. Medium-low aroma of sweet, cracked corn and grainy malt. Hop presence is subtle but noticeable, offering gentle floral and herbal notes from the Cascade and Cluster hops. Very clean fermentation with only a faint hint of fruity esters and a trace of DMS.

Taste. Initial impression is of light, grainy malt sweetness with a distinctive corny flavor. Hop bitterness is low, providing just enough structure to support the malt. Hop flavors of dried herbs and wildflowers from the Cascade and Cluster additions are subtle. The palate is well-attenuated, leading to a crisp, dry, and clean finish without harshness.

Mouthfeel. Light-bodied and crisp with a smooth texture from the corn adjunct. High carbonation provides a lively, effervescent prickle on the tongue. Alcohol warmth is negligible, contributing to high drinkability.
