This American Pale Ale delivers a vibrant, modern sensory experience, scaling the intensity of a Triple IPA into a sessionable format. The hop profile is driven by the bright, tropical punch of Citra and Citra Cryo, yielding layers of sweet mango and grapefruit. Galaxy contributes a deep passionfruit character, while Nelson Sauvin provides sophisticated notes of crushed white grapes and gooseberry. A lean, neutral malt base offers just enough structural support to allow the southern hemisphere and Pacific Northwest hops to dominate. It finishes crisp and refreshingly dry, defined by a clean, moderate bitterness and a lingering citrus zest.

Appearance. Pale golden (6 SRM) with a moderately large, white, creamy head featuring excellent retention and fine lacing; generally clear with a very slight hop-induced shimmer.

Aroma. High intensity hop aroma showcasing pronounced tropical fruit (passionfruit, mango), citrus (grapefruit), and a distinct vinous, white grape quality. Low, neutral grainy maltiness is present in the background, and the fermentation profile is exceptionally clean.

Taste. Initial impression of tropical and stone fruits including ripe peach and lime zest, followed by a sophisticated white wine character. Moderate bitterness provides balance to the supportive, slightly bready malt. The finish is dry and clean with lingering citrus oils and no harshness.

Mouthfeel. Medium-light body with moderate to high carbonation. Smooth and crisp on the palate with no perceived alcohol warmth and zero astringency, emphasizing high drinkability.

Introducing Wee Yin, which features the same hop bill of Citra, Nelson Sauvin and Galaxy, but has been dialled back to a sessionable 4.5%. The tropical fruit flavours you expect for from Big Yin are present, but its lighter, and very gluggable.
