This Wild Specialty Beer is a decadent, complex exploration of flavor, pushing the boundaries of wild fermentation with a 9% ABV backbone. A vibrant medley of raspberries and blackberries provides a sharp tartness that is softened by the creamy, tropical presence of bananas and peaches. Deep, earthy coffee notes intertwine with the rich sweetness of maple syrup and vanilla, while vegan marshmallows contribute a subtle confectionary roundness. The result is a bold, multi-layered profile where funky wild esters meet a luxurious, dessert-like intensity, finishing with a lingering harmony of dark fruit and roasted coffee.

Appearance. Deep purple to garnet in hue with a thick, pink-tinted foam head that shows moderate retention. Opaque and viscous, appearing similar to a heavy fruit nectar due to the massive fruit addition.

Aroma. High intensity. Upfront aromas of jammy raspberry and blackberry are followed by the scent of roasted coffee and sweet maple syrup. Underlying notes of ripe banana and vanilla bean meld with a faint lactic tartness and a subtle marshmallow sweetness. Clean wild fermentation character is present but largely secondary to the heavy adjunct load.

Taste. An explosion of mixed berry tartness from raspberries and blackberries greets the palate, quickly balanced by the sweetness of maple syrup and the smoothness of vanilla and banana. The mid-palate reveals an integrated earthy coffee character. The finish is long and complex, transitioning from fruit acidity to a lingering marshmallow and peach sweetness. Hop bitterness is virtually nonexistent, with the structural balance provided by fruit acidity.

Mouthfeel. Full-bodied and viscous, far heavier than typical wild ales due to the high gravity and adjunct density. Carbonation is moderate, providing enough lift to prevent cloying. A noticeable but well-integrated alcohol warmth is present, accompanied by a creamy, coating texture.
