The sensory profile is dominated by the jammy sweetness of ripe plums and cherries, sharply countered by the electric tartness of red currants. Indian coriander seeds provide a bright, lemony lift that complements the lactic acidity, while Blackthorn sea salt adds a distinct savory depth and a mouthwatering finish. Appearance. Deep magenta to reddish-purple with a moderate haze; features a pinkish-white, frothy head with good retention and light lacing.
Aroma. High intensity of jammy plum and tart cherry, followed by bright red currant notes. Beneath the fruit lies a soft, bready wheat malt character, light citrusy coriander, and a subtle, clean lactic sourness with a hint of sea spray.
