Ray Zen reimagines the robust American Stout as a liquid bakery treat, wrapping a rich chocolate and coffee backbone in comforting, warm spices. Generous portions of wheat and oats create a velvety-smooth canvas for the enticing aromas of freshly grated cinnamon and dark, jammy raisin puree. On the palate, the assertive roasted grain bitterness of the classic style is softened by a wave of sweet, dark-fruited sugars, evoking memories of a freshly baked cinnamon raisin cookie. A subtle, drying resinous hop finish balances the decadent, spiced complexity, ensuring this comforting stout remains remarkably drinkable.
Appearance. Opaque, jet black in color (SRM 38) with a thick, creamy, persistent light brown head that leaves dense lacing.
Aroma. High intensity aroma showcasing prominent dark chocolate, espresso, and roasted grain notes. Strong accents of warm, spicy cinnamon and sweet, vinous raisin blend seamlessly with light, clean, dark-fruit fermentation esters and a very low, earthy hop presence.
Taste. Begins with bittersweet chocolate and robust espresso, quickly accompanied by sweet raisin puree and a warming, woody cinnamon spice. Medium-high bitterness from both the dark roasted malts and earthy hops balances the inherent sweetness of the adjuncts. The finish is medium-dry with a lingering, pleasant aftertaste of spiced dark chocolate and toasted oats.
Mouthfeel. Medium-full, creamy, and exceptionally smooth body due to the generous addition of wheat and oats. Carbonation is moderate, presenting a velvety texture with a light, comforting warmth from the cinnamon and 6% alcohol, with no harsh astringency.
