Overtone Brewing Co

Rasp Lime Rickey is a vibrant Wild Specialty Beer that captures the essence of a refreshing summer session at a nimble 3.5% ABV. A delicate wild fermentation provides a clean, tart foundation for the infusion of luscious raspberry puree and zesty lime juice. The aroma is dominated by bright, sun-ripened berries and a sharp citrus edge, underpinned by subtle lactic acidity. On the palate, the soft sweetness of raspberries is quickly balanced by the crisp, thirst-quenching bite of fresh lime. Effervescent and light-bodied, this sparkling sour finishes exceptionally dry with a lingering fruit-skin tartness, making it an ideal choice for warm-weather refreshment.

Appearance. Hazy, pale pinkish-red with a soft, rose-tinted head. Retention is moderate to low, leaving thin lacing as the high effervescence subsides.

Aroma. High intensity of fresh, jammy raspberry puree and zesty lime zest. The aroma is sharply acidic with clean lactic notes and no hop character. A very low, neutral grainy malt presence is buried under the vibrant fruit, while a hint of earthy wild fermentation adds complexity without being overtly funky.

Taste. Initial impression is a burst of tart raspberry juice followed immediately by the bracing, citrusy tang of fresh lime. The soft sweetness of the raspberry puree provides a brief mid-palate roundness before being swept away by a sharp, clean acidity. Hop bitterness is negligible, allowing the fruit acids to define the balance. The finish is short and bone-dry with a lingering, refreshing lime-skin aftertaste.

Mouthfeel. Light-bodied and highly carbonated, providing a prickly, sparkling sensation on the tongue. Alcohol warmth is non-existent. A very slight, pleasant astringency from the raspberry seeds enhances the dry, crisp finish.
