Overtone’s P.B.J. is a nostalgic, complex Wild Specialty Beer that masterfully bridges the gap between a classic American childhood snack and a sophisticated sour ale. The sensory experience is led by a vibrant burst of traditional red grape jelly, offering deep concord grape notes that mingle with the earthy, nutty richness of natural peanut butter flavouring. Aurora hops contribute a subtle floral and spice backdrop that complements the acidic lift of the wild fermentation. This rich sour provides a playful interplay of jammy sweetness and savory nuttiness, all underpinned by a bright, refreshing tartness that cleanses the palate after each indulgent sip.
Appearance. Pours a deep, hazy ruby-purple with reddish-brown highlights (SRM 18-22). The head is moderate in height with a light pinkish-tan tint, showing fair to poor retention common in beers with high fruit acidity and nut oils.
Aroma. High intensity aromatics of sweet concord grape jelly and jammy dark fruits. This is quickly followed by a distinct, earthy roasted peanut character. A clean, sharp lactic acidity is present, alongside very subtle floral and herbal notes from the Aurora hops. Bready malt is minimal.
Taste. Bold, tart red grape and berry flavors dominate the initial impression. The mid-palate introduces a savory, creamy peanut butter flavor that provides a unique counterpoint to the high acidity. Hop bitterness is low, allowing the sourness to lead the balance. Finishes relatively dry with a lingering peanut-shell earthiness and a hint of fruit-skin tannin.
Mouthfeel. Medium-full body, exhibiting a richness and slight oily creaminess from the peanut butter additions. Carbonation is moderate to high, providing a prickly sensation that cuts through the weight. A light, well-integrated alcohol warmth is present at 7% ABV.
