Otago presents a vibrant, New Zealand-influenced take on the American Pale Ale, blending West Coast structural elements with the unique terroir of Southern Hemisphere hops. The sensory profile is headlined by a sophisticated hop blend of Rakau, Moutere, and Nectaron, which delivers an intense bouquet of stone fruit, tropical passionfruit, and zesty lime. A clean, neutral malt base allows these complex hop notes to shine, leading into a refreshing, firm bitterness that stays balanced. Appearance. Pale golden to light amber (SRM 5–7). Clear to brilliant with a moderately large, off-white head that demonstrates good retention and fine lacing.
Aroma. Moderately high hop intensity featuring distinct notes of stone fruit, apricot, and tropical passionfruit. Subtle resinous pine and citrus undertones are supported by a low, neutral bready malt character and a very clean fermentation profile.
Taste. The initial impression is hop-forward with flavors of peach and pineapple. A refreshing, moderate to high bitterness provides a firm counterpoint to the low, grainy malt presence. Finishes medium-dry and clean with a lingering citrus and resinous hop aftertaste that remains smooth and free of harshness.
Mouthfeel. Medium-light to medium body with moderate to high carbonation. Crisp and smooth mouthfeel with very low alcohol warmth and no perceived astringency.
