Overtone Brewing Co

King of the Bongo is a potent Wild Specialty Beer that delivers a lush, tropical experience driven by massive additions of Mango, Papaya, Guava, and Coconut. The sensory profile is dominated by the jammy, succulent depth of the tropical fruits, which melds seamlessly with the complex, funky esters of a wild fermentation. At 8% ABV, there is a sophisticated warmth that supports the dense fruit character. The Coconut adds a creamy, rounding element that balances the vibrant acidity, while the base beer’s wild nature provides a dry, slightly tannic finish. It is a bold, fruit-forward exploration of the American Wild Ale style.

Appearance. SRM 6–10; deep golden to vibrant orange with significant haze and opacity from heavy fruit additions. The head is off-white to ivory, showing moderate to poor retention with light lacing, typical for beers with high fruit oil and coconut content.

Aroma. High intensity aromatics of ripe Mango, musky Guava, and sweet Papaya. A distinct creamy, nutty Coconut presence provides a tropical backdrop. Underlying wild fermentation characteristics include light lactic tartness and subtle earthy funk, with very low malt or hop presence.

Taste. Initial impression is a burst of tropical fruit saturation featuring prominent Mango and Guava. The Papaya contributes a soft, melon-like sweetness that is balanced by a firm lactic acidity. Coconut provides a rich, fatty smoothness in the mid-palate. Low hop bitterness allows the tartness to lead. The finish is surprisingly dry for the fruit intensity, with a lingering tropical essence and mild funk.

Mouthfeel. Medium-full body with a thick, almost pulpy texture enhanced by the coconut. Carbonation is moderate. A noticeable alcohol warmth is present but well-integrated at 8% ABV. Low astringency with a smooth, coating creaminess.
