This Double IPA celebrates the multifaceted Simcoe hop through a triple dry-hopping process, resulting in an intense sensory experience. At 8% ABV, it presents a thick, velvety texture that carries vibrant aromas of passionfruit and ripe apricot. The palate is dominated by these stone fruit and tropical notes, which are skillfully balanced by Simcoe's signature earthy undertones and sharp resinous pine. While the mouthfeel is substantial and juicy, it maintains the core Double IPA identity with a firm, clean bitterness that cuts through the rich fruit profile, finishing with a lingering, resinous complexity and a smooth alcohol presence.

Appearance. Ranges from deep gold to light orange (8-10 SRM). Displays a persistent, creamy off-white head with excellent lacing. While the style traditionally allows clarity, this modern interpretation presents a soft, hazy opacity consistent with its juicy character.

Aroma. High intensity, showcasing a complex Simcoe bouquet of pungent passionfruit, apricot, and mango. These tropical fruit notes are layered over a base of dank resin, pine needles, and a subtle earthy spice. Malt is very low and neutral, providing a clean canvas for the hops.
