Giant Peach is a vibrant Wild Specialty Beer that balances bright acidity with a lush, dessert-like indulgence. At its core, massive additions of peach purée deliver an authentic stone fruit sweetness that harmonizes with the unique floral and orange-vanilla nuances of Lotus hops. While the wild fermentation provides a refreshing lactic tartness, the mouthfeel remains remarkably velvety and creamy, reminiscent of a melting peach ice cream. This profile creates a playful tension between sharp sour notes and a smooth, lingering finish, resulting in a complex yet approachable fruited ale that captures the essence of a sun-ripened summer harvest.
Appearance. Hazy, sunset orange to pale amber (SRM 6–9); pours with a moderate, fine-beaded white head that recedes to a creamy collar; opaque with visible fruit density.
Aroma. High intensity of fresh, jammy peach and nectarine; secondary notes of orange blossom and vanilla from Lotus hops; clean lactic sourness with a subtle underlying doughy malt character and faint wild funk.
Taste. Initial impression is a burst of tart peach and citrus zest; mid-palate reveals a soft, bread-crust malt sweetness and vanilla creaminess. Hop flavor is floral and fruity with very low bitterness. The finish is smooth and ice cream-like with a lingering, pleasant peach skin tartness and no harsh acidity.
