This modern Wild Specialty Beer delivers a decadent, dessert-like sensory journey. It bursts with the intense, sun-ripened aromas of luscious apricot and peach, evoking a rich yoghurt smoothie. The thoughtful additions of lactose and vanilla introduce deep, velvety sweetness and comforting dessert-like layers, beautifully rounding out the sharp lactic acidity of the wild sour base. Poured into a glass, it displays a vibrant, completely opaque, nectar-like orange-yellow hue. The mouthfeel is exceptionally plush and full-bodied, mimicking a fresh fruit puree, while maintaining a balanced sour tang and a lingering, creamy, vanilla-tinged finish.
Appearance. Deep, vibrant orange-yellow hue with a dense, pastel-orange head of poor-to-moderate retention that leaves minimal lacing. Completely opaque and thick, resembling a fresh, pulpy fruit smoothie or apricot nectar.
Aroma. High intensity. Dominated by highly expressive, sweet, and jammy apricot and ripe peach aromas. A noticeable, yogurt-like lactic tartness weaves through the fruit, complemented by a prominent, sweet pastry note of creamy vanilla and milky lactose. Low to no hop aroma or malt character detectable.
Taste. Initial impression is a burst of juicy, sweet apricot and peach puree. The mid-palate introduces a clean, moderate lactic sourness that cuts through the fruit density. Lactose and vanilla provide a prominent, milky sweetness that balances the sourness, creating a dessert-like, yoghurt-smoothie profile. Hop flavor is absent, and bitterness is extremely low. The finish is long and sweet, with lingering notes of vanilla-creamed stone fruit and a soft, acidic tang.
Mouthfeel. Full and viscous body with a thick, smooth, smoothie-like texture. Carbonation is low to moderate, presenting as a soft, gentle sparkle rather than a sharp effervescence. Alcohol warmth is very well hidden, presenting only a subtle, warming presence appropriate for 7% ABV. Creamy and mouth-coating with absolutely no astringency.
