Ovata Bise
Ovata Bise is a vibrant American IPA that highlights a unique French hop profile through the use of Elixir and Mistral. The sensory experience is dominated by bright pink grapefruit and elegant jasmine, supported by a clean, grainy base of Pilsner and Vienna malts. The inclusion of Carapils and Avoine provides a subtly creamy texture and excellent head retention, while the Lallemand Verdant yeast introduces light stone fruit esters. A foundational bitterness from Magnum hops ensures a crisp, dry finish. This aromatic ale balances its floral complexity with a smooth mouthfeel, delivering a spring-like character that pairs exceptionally well with spicy cuisine.
Appearance. Color is medium gold (SRM 7) with a slight, persistent haze. Features a medium-sized, white, creamy head with excellent persistence and intricate lacing.
Aroma. Moderate-high intensity hop aroma featuring prominent notes of grapefruit and floral jasmine. Low grainy-sweet malt character with light bready notes from the Vienna malt. Low fermentation esters reminiscent of apricot and peach are present.
Taste. Initial hop-forward impression of citrus zest and floral herbs. Medium-high bitterness is clean and well-supported by a low to medium-low grainy maltiness and light toast. Fermentation is clean with a slight fruity ester profile. The finish is dry to medium-dry with a lingering, hoppy, and pleasantly bitter aftertaste.
Mouthfeel. Medium body with a notably smooth, slightly creamy texture. Carbonation is moderate-high. Alcohol warmth is very low and well-integrated. No hop harshness or astringency.
