This high-gravity Double IPA showcases an intense hop bouquet driven by Mosaic, Simcoe, and Sterling. Vivid sensory notes of ripe honeydew and juicy apricot dominate the profile, complemented by the sharp, vinous character of gooseberry. Despite its potent 10.5% ABV, the beer maintains a focused sensory path where the tropical and stone fruit aromatics are supported by a clean, neutral malt base. The Sterling hops contribute a subtle, refined herbal spice that balances the lush fruitiness from the Mosaic and Simcoe, resulting in a complex, layered experience that highlights a mastery of modern, hop-forward ales.
Appearance. Deep gold to light orange-copper color (SRM 7-9). Features a moderate-sized, persistent off-white head with good lacing. Modern clarity is mostly clear with a slight, acceptable haze.
Aroma. High intensity hop aroma featuring prominent notes of honeydew melon, apricot, and gooseberry. Background hints of pine and light resin are present. Malt character is low, clean, and neutral, allowing the hop-derived tropical and stone fruit esters to dominate.
Taste. Initial impression is a burst of complex hop flavors including apricot, melon, and berry. High bitterness is firm but smooth, providing balance without being harsh. Low, supportive malt sweetness quickly gives way to a medium-dry, clean finish with a lingering hoppy aftertaste of pine and gooseberry.
Mouthfeel. Medium-full body with a smooth, velvety texture. Carbonation is moderate. A noticeable and warming alcohol presence is felt, consistent with its high strength, but it remains well-integrated and lacks astringency.
