This vibrant Wild Specialty Beer delivers an immediate tropical impact reminiscent of a sun-drenched island punch. At a sessionable 4% ABV, the profile is dominated by the bright, juicy acidity of pineapple and the sharp, citrusy zing of lime. Orange provides a sweet, zesty mid-palate, while passionfruit adds a characteristic tropical musk and deep aromatic complexity. The wild fermentation lends a crisp, lactic tartness that elevates the fruit character without overwhelming it. Appearance. SRM 3–5. Pale straw to deep gold with a slight hazy luminescence from the fruit additions. Pours with a moderate white head that dissipates quickly to a thin ring; lacing is minimal due to the high acidity.
Aroma. High intensity aromatics of fresh pineapple and tart passionfruit. Secondary notes of orange zest and squeezed lime juice provide a bright citrus lift. Very low malt presence; a clean, sharp lactic tartness is evident with a subtle, earthy wild yeast character.
Taste. Initial impression is a burst of tart tropical fruit. Pineapple and passionfruit flavors are prominent, supported by a distinct lime acidity. Orange provides a subtle pulpy sweetness in the background. Hop bitterness is non-existent; the balance is firmly shifted toward fruit acidity. The finish is very dry and clean with a lingering citrus aftertaste.
Mouthfeel. Light body with high carbonation that creates a spritzy, refreshing sensation. Alcohol warmth is absent. Very low astringency, though the fruit acids provide a crisp, tongue-tingling sensation.
