This innovative Lambic from Oud Beersel marries the sharp, lactic brightness of spontaneous fermentation with the earthy, tannic complexity of green walnuts. Aged in wooden wine barrels, the blend of one and two-year-old lambics develops a sophisticated profile where traditional barnyard funk and horse-blanket notes meet subtle red fruit esters derived from the seasoned oak. The July-harvested green walnuts introduce a unique, mellowed bitterness that provides a structured counterpoint to the citrusy acidity. Effervescent and bone-dry, it finishes with a lingering, nutty depth and a hint of tannic grip, offering a rustic yet refined sensory experience that bridges the gap between wild ale and fine wine.

Appearance. Deep gold to light amber (6–10 SRM); hazy to mostly clear with age. Low to moderate white head with fair retention and light lacing, typical for bottle-conditioned Lambic.

Aroma. High intensity with a complex blend of lactic tartness and characteristic Brettanomyces funk, including notes of hay, wet wool, and earthy cellar. Distinctive green walnut skin provides a unique woody, nut-meat aroma, complemented by subtle vinous notes and hints of red fruit from the wine barrel aging. No hop aroma.

Taste. Initial impression is sharply acidic and refreshing. Low bready malt and wheat flavors are present but secondary to a complex lactic sourness. The green walnuts contribute a moderate, earthy bitterness that balances the tartness without the use of hops. Notes of rhubarb and citrus zest lead into a very dry, crisp finish with a lingering walnut aftertaste and subtle oak-derived red berry notes.

Mouthfeel. Medium-light body with a moderately high carbonation level that enhances the perceived acidity. A light to moderate tannic astringency is present from the walnut skins and wood aging, providing a puckering, structured mouthfeel. Low alcohol warmth.
