This Hazy IPA offers a saturated tropical profile driven by a heavy double dry-hop of Citra, Mosaic, Talus, and Sabro. The sensory experience is dominated by sticky orange, tart passionfruit, and a distinct mango ice cream character, enhanced by a unique fermentation using yeast isolated from flowers. This non-traditional yeast unlocks deep biotransformation notes, adding floral complexity to the intense fruitiness. A malt base featuring oats provides a soft, cushioning sweetness that balances the vibrant hop oils. The result is a lush, juice-forward ale with a smooth, approachable finish that emphasizes depth of aroma over harsh bitterness.
Appearance. Color is a pale, glowing orange (SRM 6). The beer is opaque with a characteristic hazy shine and no visible particulates. It features a medium, rocky, meringue-like white head with very high retention and thick lacing.
Aroma. High intensity hop aroma featuring a complex blend of mango, passionfruit, and citrus from the Citra and Mosaic. Sabro and Talus contribute notes of cream, grapefruit, and a hint of cedar. The oats provide a light, bready, and grainy malt background, while the floral yeast adds unique, sweet-scented esters.
Taste. Initial impression is an explosion of tropical fruit, specifically sticky orange and mango. Hop flavor is very high, presenting a creamy 'mango ice cream' quality supported by the soft malt sweetness of the oats. Bitterness is low-moderate and exceptionally smooth, never becoming harsh. The fermentation character is clean but supportive of the floral hop notes, leading into a smooth, off-dry finish.
Mouthfeel. Medium-full body with a smooth, silky texture and no raw starch or astringency. Carbonation is moderate. Alcohol warmth is very light and well-integrated, contributing to a soft overall mouthfeel.
