Cerberus 2023 is a monumental Imperial Stout that showcases an intricate marriage of smooth roasted malts and the refined influence of Bunnahabhain sherry butt aging. The initial impression is decadently rich, reminiscent of freshly baked chocolate pudding and deep molasses. As the liquid warms, complex layers of tobacco and dark cherry emerge, weaving through a sophisticated tapestry of vinous sherry notes and a whisper of Islay peat. The 11.7% ABV is masterfully integrated, providing a lingering, velvet warmth that complements the beer's substantial, chewy structure. This vintage expression balances intense bitterness with a lingering, bittersweet finish of dark cocoa and dried fruit.

Appearance. Opaque jet black (SRM 40). It supports a thick, deep tan head with moderate retention that leaves persistent oily lacing and visible legs on the glass.

Aroma. Intense and multi-faceted, featuring a deep base of dark chocolate pudding, molasses, and roasted coffee. Pronounced dark fruit esters of cherry and plum meld with the vinous, nutty character of sherry. Subtle notes of tobacco and a very light, earthy peat smoke arise from the barrel aging. Hop aroma is very low.

Taste. The palate is dominated by a luscious blend of chocolate pudding and smooth roasted malts. Mid-palate flavors of molasses and dark cherry are punctuated by savory tobacco and a refined sherry oak dryness. Bitterness is firm but well-integrated, providing a necessary counterpoint to the malty sweetness. The finish is long and complex, evolving from bittersweet cocoa to a warming, vinous aftertaste.

Mouthfeel. Exceptionally full-bodied with a viscous, chewy, and velvety texture. Carbonation is moderate-low, enhancing the beer's luxurious mouthfeel. A significant but smooth alcohol warmth provides a comforting glow without any harshness.
