Perpetually Green is a vibrant Double IPA that showcases an intensive hop profile layered over a complex grain bill. The addition of oats and spelt creates a soft, opaque foundation, allowing the high-intensity notes of Galaxy, Cashmere, and Ekuanot to shine. This combination delivers a saturated sensory experience of passionfruit, ripe melon, and zesty lime, further enhanced by the stone fruit esters of Vermont yeast. While providing the substantial hop presence expected of the style, the bitterness remains smooth and integrated, finishing with a clean, tropical resonance that expertly balances the 7.5% ABV through a silky, pillowy mouthfeel.
Appearance. Pale gold to light orange (7 SRM). Large, persistent white head with dense lacing. Typically opaque or heavily hazy due to the high protein content from oats and spelt.
Aroma. High intensity. Dominant tropical notes of passionfruit and papaya from Galaxy and Ekuanot, paired with sweet melon and lemon zest from Cashmere. The Vermont yeast adds a supporting layer of peach and apricot esters. Background malt is neutral and slightly grainy.
Taste. Initial burst of tropical fruit and citrus. Malt flavor is low but supportive, with a soft, bready character from the 2-Row and oats. Bitterness is firm and assertive but lacks harshness, balancing the fruity saturation. Finish is medium-dry with a lingering resinous and tropical fruit aftertaste.
Mouthfeel. Medium-full body with a notably creamy, silky texture derived from the oats and spelt. Carbonation is moderate. A gentle, smooth alcohol warmth is present but well-integrated.
