Laid Back is a vibrant Wild Specialty Beer that masterfully bridges the gap between a luscious, fruited sour and a tropical India Pale Ale. The sensory journey begins with an inviting, juicy wave of fresh, ripe peaches and creamy vanilla, pillowed by a soft, rounded grain bill of oats and wheat. Bright, tropical hop bursts of Citra, Galaxy, and Motueka bring layers of zesty lime, passionfruit, and sweet citrus that intertwine beautifully with a clean, lactic sourness. Lactose adds a subtle, smoothing sweetness, creating a dessert-like harmony that finishes refreshingly tart and extraordinarily complex.
Appearance. Pours a hazy, deep gold to light amber with a distinct orange-peach tint. Supported by a moderate, frothy, off-white head that exhibits fair retention and leaves light lacing on the glass.
Aroma. High intensity aromatics. A dominant burst of fresh, ripe, fleshy peach and sweet vanilla bean is immediately apparent, supported by a potent tropical hop profile of lime zest, passionfruit, and grapefruit from the Citra, Galaxy, and Motueka. Taste. Initial impression is a lively contrast of tart peach and tangy lactic sourness balanced against a velvety, lactose-driven sweetness and rich vanilla. Tropical hop flavors of lime, mango, and passionfruit emerge mid-palate, backed by a low hop bitterness. The finish is off-dry and exceptionally clean, lingering with notes of peach puree, soft vanilla cream, and a bright citrus acidity.
Mouthfeel. Medium body with a plush, velvety, and creamy texture derived from the addition of oats, wheat, and lactose. Carbonation is moderate to high, adding a lively sparkle that cuts through the creaminess. Alcohol warmth is negligible, and there is no perceived astringency.
