Emerald Cities is a luminous Double IPA that showcases a sophisticated hop profile against a plush grain bill. The use of Pils malt, oats, and wheat creates a silky, soft canvas for the vibrant hops to shine. Aromas of ripe honeydew from Huell Melon and zesty lime from Motueka lead the charge, followed by the complex berry and tropical notes characteristic of Mosaic. On the palate, Waimea adds a distinctive citrus and pine resin depth. This beer balances intense fruitiness with a clean, smooth finish, offering a refined expression of the style with integrated alcohol warmth and a creamy, substantial mouthfeel.
Appearance. Pale gold (6-8 SRM) with a heavy, persistent, white frothy head that leaves significant lacing. Shows a noticeable haze consistent with the high protein content of oats and wheat.
Aroma. High intensity hop aroma featuring layers of tropical mango, honeydew melon, lime zest, and subtle berry. A supportive, clean, grainy malt presence from the Pils and wheat is found in the background with a very light, clean alcohol note.
Taste. Strong, complex hop flavors dominated by citrus, melon, and tropical fruit. Mosaic provides a dark berry undertone while Waimea contributes a crisp pine resin. Bitterness is firm but remains smooth without harshness. The malt character is soft and bready, leading to a medium-dry finish with a lingering hoppy aftertaste.
Mouthfeel. Medium-full body with a silky, creamy texture derived from the oats and wheat. Carbonation is moderate. A restrained, smooth alcohol warmth is present but well-integrated, with no hop-derived astringency.
