OSTROVICA Holy DIPA
This Double IPA presents an aggressive sensory landscape dominated by a potent blend of Simcoe, Citra, Cascade, and Centennial hops. The nose is greeted by an intense rush of resinous pine and sharp grapefruit, followed by softer notes of tropical passion fruit and floral blossoms. On the palate, the hop-forward profile delivers layers of citrus zest and earthy resin supported by a lean, neutral grainy malt base. The bitterness is firm yet clean, driving toward a dry, lingering finish. At 8.2% alcohol, it offers a smooth, integrated warmth that underscores its complexity while maintaining high drinkability through its dry fermentation character.
Appearance. Gold to light orange-copper (7-10 SRM) with good clarity. Features a moderate-sized, persistent, off-white head with excellent lacing.
Aroma. High intensity hop aroma featuring prominent notes of resinous pine, grapefruit, and floral blossoms. Supportive tropical fruit notes like passion fruit are present. Malt character is low and neutral, appearing as light crackers or grain. Fermentation is clean with minimal esters.
Taste. Initial impression is a massive wave of hop flavor including pine, citrus zest, and earthy spice. Bitterness is very high but lacks harshness. Malt flavor is low, clean, and soft, providing a brief bready support before a very dry, crisp finish. The aftertaste is long and hoppy with lingering resin. Alcohol is clean and smooth.
Mouthfeel. Medium body with a smooth, slightly oily texture from hop oils. Carbonation is medium-high. Provides a restrained, smooth alcohol warmth without any solvent-like heat or astringency.
