Lab Rat is a vibrant Wild Specialty Beer that captures the essence of a key lime pie within a sessionable, tart frame. A bright, zesty aroma of fresh lime peel and lime curd dominates the nose, underpinned by a subtle, creamy lactic acidity. The palate leads with a refreshing, juicy sourness that mimics sweet limes, balanced beautifully by a rich, biscuit base reminiscent of a graham cracker crust. This interplay of citrus zing and toasted grain creates a playful complexity, finishing crisp and dry with a lingering lime zest brightness. It is an approachable yet characterful sour, crafted for those seeking a bold, dessert-inspired citrus experience.

Appearance. Pale straw to light gold (3-4 SRM). Features a moderate white head with fair retention and slight lacing. Displays a slight haze consistent with the addition of fruit zest and specialty grains.

Aroma. Moderate-high intensity. Dominant aromatics of fresh lime zest and lime juice provide a sharp, citrusy profile. Low malt character of toasted biscuit and cracker. Fermentation character is cleanly lactic and tart, with negligible hop aroma and no detectable dimethyl sulfide.

Taste. Initial impression is a refreshing, tangy acidity followed by prominent sweet lime flavors and zesty citrus oils. The malt provides a moderate-low toasted biscuit and cereal grain backbone that balances the sourness. Hop bitterness is very low, allowing the tartness to define the structure. Finishes dry and clean with a lingering lime zest aftertaste.

Mouthfeel. Medium-light body with moderate-high carbonation that provides a crisp, effervescent prickle. Alcohol warmth is negligible. Very low astringency from lime zest, with a smooth, refreshing mouth-cleansing quality.
