This sophisticated Belgian Tripel presents a polished deep gold hue, derived from a grist of barley, wheat, and oats. The aroma is a complex tapestry of orange blossom honey and bright citrus esters, intertwined with the delicate, spicy botanicals of anise and coriander. On the palate, the inclusion of orange blossom honey lends a subtle nectar-like sweetness that balances the firm, persistent bitterness of noble Central European hops. Despite its strength, the beer maintains a high degree of drinkability through meticulous cold-conditioning and bottle conditioning, finishing dry with a lingering, spiced floral character and a dense, creamy white head.
Appearance. Deep gold color (7 SRM). Exhibits good clarity with a slight effervescent shimmer. Produces a dense, rocky, long-lasting white head with excellent lacing.
Aroma. Moderate to high intensity bouquet. Pronounced floral honey notes from orange blossom honey combine with citrusy esters and a background of spicy, peppery phenols. Distinctive aromatic layers of anise and coriander are present but well-integrated, supported by a low, floral hop character and soft, grainy-sweet malt.
Taste. The initial impression is a harmonious blend of honeyed malt sweetness and spicy yeast character. Mid-palate flavors reveal orange zest, anise, and a hint of peppery coriander. Bitterness is moderate but becomes more apparent in the dry, crisp finish. The hop flavor is low and floral, providing a clean balance to the complex fermentation and spice profile.
Mouthfeel. Medium body with a slightly creamy texture from the addition of oats and wheat. High carbonation provides a lively, effervescent mouthfeel. Alcohol warmth is low and exceptionally well-integrated, providing a smooth, clean sensation without harshness.
