The sensory experience is defined by a rich bouquet of toasted oak and dark molasses, intertwined with the deep, vinous character of smoked plums and dried stone fruits. On the palate, a smooth lactic tartness balances decadent dark chocolate notes and the rustic, earthy funk of Brettanomyces, reminiscent of cured hay and garden sorrel. The extended wood aging contributes firm tannins and a complex, dry finish, resulting in a harmonious, medium-full-bodied wild ale that elegantly showcases both microbial character and barrel-derived depth.
Appearance. Deep mahogany to near-opaque ebony (SRM 35-40). Pours with a thin, tan head of moderate persistence that leaves delicate lacing. Clarity is clear to slightly hazy, typical of long-term barrel aging.
Aroma. High intensity and complex. Dominant notes of toasted oak and rich molasses are layered with dark, jammy fruit esters like smoked plums and cherries. A distinct funky profile provides earthy undertones of wet hay, complemented by a clean, sharp lactic acidity and a subtle hint of wood-derived spice from the extended aging.
Taste. The initial impression is a smooth, firm tartness from lactic bacteria, quickly followed by deep malt flavors of dark chocolate and treacle. Mid-palate introduces complex fruitiness—notably stone fruits and smoked plums—paired with the rustic funk of hay and garden sorrel. The finish is notably dry and clean, with lingering toasted oak tannins and a pleasant, vinous complexity.
Mouthfeel. Medium-full body, lent richness by the addition of barley and oat flakes despite the high attenuation. Carbonation is moderate, providing a lively prickle. A noticeable but well-integrated alcohol warmth is present, alongside a moderate tannic astringency from the oak.
