Cuvée Mateea is an intricate Brett Beer that reveals the rewards of a twenty-two-month maturation in oak barrels. This dark, wild specialty ale greets the senses with a sophisticated marriage of raspberry extract and the rustic complexity of Brettanomyces and lactic bacteria. Deep notes of molasses and toffee from the barley malts intertwine with toasted oak and dark stone fruits, while barley and oat flakes provide a refined texture. Appearance. Deep mahogany to near black (35–40 SRM). Thin, tan head with moderate retention and light lacing. Hazy appearance due to the inclusion of oat flakes and long-term wild fermentation.
Aroma. High intensity featuring a complex bouquet of fresh raspberries, molasses, and toasted oak. Distinctive Brettanomyces funk provides notes of dry hay and barnyard, layered over dark stone fruits and sweet toffee. Lactic acidity is detectable as a sharp, clean tang.
Taste. Rich flavors of raspberry pie and toffee lead, followed by a mid-palate of dark fruit and molasses. The fermentation character is assertive, offering smooth lactic tartness and earthy Brettanomyces funk. Toasted oak provides structured tannins and a hint of vanilla.
