Appearance. Opaque, deep black (approx. 40 SRM) with a thick, persistent, creamy mocha-colored head that leaves dense lacing on the glass.
Aroma. High intensity with dominant notes of dark chocolate and lightly roasted coffee, complemented by a significant stone fruit presence of dried apricots. A distinct piney and resinous rosemary herbal character weaves through the cream-like sweetness, while a faint earthy spice from the chili is perceptible. Low floral hop aroma.
Taste. Rich chocolate and sweetened coffee flavors lead, immediately followed by the tart-sweet tang of dried apricots. The mid-palate introduces a savory, herbal rosemary layer that provides a unique counterpoint to the creamy sweetness. Moderate bitterness is present but softened by residual sugars. The chili adds a very subtle, earthy depth and a minute tingle rather than sharp heat. The finish is long and sweet with a lingering cocoa and herbal aftertaste.
