This 6th-anniversary Double IPA offers a whimsical, pastry-inspired profile that pushes the boundaries of the style. Intensely aromatic, it layers the resinous and citrus-forward hop character expected of the style with fragrant cinnamon and creamy vanilla. The addition of carrot juice lends a unique earthy depth, while lactose provides a velvety sweetness that mimics the richness of its carrot cake inspiration. On the palate, the expected firm bitterness is softened by the smooth mouthfeel and spice-forward finish. Despite the confectionery elements, the beer retains the clean, powerful hop punch and warming alcohol presence typical of a strong American ale.
Appearance. Deep gold to orange-copper (10-14 SRM); hazy to opaque due to the carrot juice and adjunct additions; dense, creamy off-white head with excellent persistence and thick lacing.
Aroma. High intensity; bold citrus and piney hop notes are immediately met by warm, spicy cinnamon and sweet, marshmallow-like vanilla. Background notes of earthy carrot and a subtle, milky sweetness from lactose over a neutral, grainy malt base.
Taste. High hop intensity with layers of grapefruit and resin balanced by a distinct spiced carrot cake character. Sweet lactose and vanilla provide a frosting-like mid-palate, followed by a sharp, moderately high bitterness. The finish is medium-dry with a lingering interplay of cinnamon spice and hoppy citrus.
Mouthfeel. Medium-full body with a notable creaminess and smooth texture from the lactose. Moderate carbonation. A gentle, well-integrated alcohol warmth is present, with no harsh hop-derived astringency.
