This modern interpretation of a Belgian Dubbel marries monastic tradition with contemporary craft flair. Brewed with fresh raspberries and dry-hopped with Simcoe, Amarillo, and Columbus, it delivers an incredibly complex sensory journey. The rich, caramelized malt backbone of the base style is enlivened by bright, jammy raspberry tartness. This fruit profile is layered with vibrant pine, resin, and citrus peel notes from the hops, which mingle seamlessly with classic Belgian yeast esters of plum and clove. Finishing moderately dry with a subtle, warming alcohol presence, it is an inventive, fruit-forward twist on a classic dark abbey ale.
Appearance. Deep copper to dark reddish-brown with a distinct pinkish-ruby highlight. Slight haze is present from the dry hopping and fruit additions. Crowned by a dense, voluminous, light-pink-tinted off-white head that exhibits excellent retention and leaves thick lacing.
Aroma. High intensity. A dominant bouquet of fresh, tart raspberries is layered with resinous pine, grapefruit, and orange zest from the Simcoe and Amarillo hops. This hop-forward character is supported by classic Belgian yeast aromas of dark raisins, plums, and a light clove-like spiciness, all resting on a rich toasted malt and caramelized sugar base.
Taste. An initial wave of rich, caramelized malt and jammy raspberry sweetness is quickly countered by a bright fruit acidity. The mid-palate features dark stone fruits and spicy phenols, which are closely followed by a firm, resinous, and earthy hop flavor derived from the Columbus hops. Medium-low bitterness is accentuated by the dry hop oils and fruit tartness. The finish is moderately dry with a lingering aftertaste of raspberry skin, citrus rind, and soft clove.
Mouthfeel. Medium-full body with a remarkably smooth texture. Carbonation is medium-high, providing a lively effervescence that lightens the palate. A gentle, soft alcohol warmth is noticeable but well-integrated, with no harsh solvent notes or hop astringency.
