Hakata Red reinterprets the traditional Irish Red Ale with a bold, modern hop profile. A deep reddish-copper hue precedes an aroma where rich caramel and toasted biscuit malts meet the distinctive, high-intensity character of Sorachi Ace and Citra hops. The sensory experience is defined by an unusual and pleasant interplay of creamy coconut, bright lemon zest, and a touch of woody oak, all sharpened by a hit of fresh grapefruit. While the malt provides a sweet toffee foundation, the finish remains true to its roots—clean and dry with a lingering roasted grain snap and persistent citrus pith.
Appearance. Deep reddish-copper (12–16 SRM) with excellent clarity. Pours with a moderate, tan-colored head that shows average persistence and leaves light lacing on the glass.
Aroma. Moderate to high intensity. A base of sweet caramel, toasted bread, and light toffee is layered with dominant hop notes of coconut, lemon zest, and vibrant grapefruit. Very low esters and a faint, clean oak-like woodiness are present.
Taste. The initial impression features soft caramel and biscuity malt sweetness. This is quickly balanced by assertive hop flavors of lemon peel, grapefruit citrus, and a unique herbal-coconut quality. Bitterness is moderate, providing enough structure to offset the malt. The finish is medium-dry to dry, characterized by a light roasted grain astringency and lingering citrus notes.
Mouthfeel. Medium body with a smooth, slightly creamy texture. Moderate carbonation provides a gentle prickle on the tongue. Very light, well-integrated alcohol warmth is present at 5.2% ABV.

To celebrate the end of British summer, and welcome the start of autumn, we got together again with our friends at Hakata Ramen Bar in Bermondsey to brew a beer tailor made for their Japanese inspired menu.
The beer has a distinctive, unique characteristic from Sorachi Ace, a hop variety developed in Japan in the 1970s. Deep red in colour, this hoppy red ale has a malty, caramel base with an abundance of hop character. Sorachi Ace hops provide hints of coconut, lemon and a touch of oak, with the Citra hops delivering a hit of grapefruit citrus.
We adjusted the water profile to produce a brewing liquor high in carbonate and phosphoric acid, with a slight alkaline edge to compliment wheat-based ramen noodles.
