Ophiussa Brewing Co.

This celebratory Imperial Stout emerges as a decadent, multi-layered masterpiece. A year of maturation in Plantation rum barrels imparts deep notes of molasses and spice, seamlessly integrated through a blend with fresh stout for a velvety smoothness. The sensory experience is dominated by rich, dark Ghana cocoa nibs providing intense chocolate depth, while Georgia pecans offer a buttery, toasted nuttiness. Tahitian vanilla beans from Papua New Guinea round out the profile with a fragrant, floral sweetness. At 12% ABV, the beer presents a sophisticated balance of roasted malt bitterness and lush adjunct complexity, creating a harmonious and celebratory sipping experience.

Appearance. Jet black and opaque (SRM 40+). Pours with a thick, dark tan to mocha-colored head with moderate retention. High viscosity is evident by the presence of prominent legs on the glass.

Aroma. High intensity. Dominant aromas of bittersweet chocolate from Ghana cocoa nibs and fragrant, floral Tahitian vanilla. The Plantation rum barrel aging contributes notes of dark sugar, molasses, and spice. Moderate roasted malt character of espresso and charred grain is present, complemented by a distinct buttery nuttiness from Georgia pecans. Low dark fruit esters of prune and raisin. Alcohol is noticeable but smooth, providing a warm, spicy backdrop.

Taste. Initial impact is an explosion of rich chocolate and toasted pecans. The middle palate reveals deep layers of rum-soaked oak, molasses, and a creamy vanilla sweetness. The malt base provides a robust foundation of dark roasted grains and coffee bitterness, which balances the residual sweetness from the adjuncts. Finishes moderately sweet with a lingering aftertaste of cocoa, nuttiness, and a gentle spirituous warmth. Complex and harmonious, avoiding a syrupy profile through its roasted backbone.

Mouthfeel. Full-bodied and viscous with a chewy, velvety, and luscious texture. Carbonation is low to moderate, enhancing the weight on the palate. Significant but well-integrated alcohol warmth provides a pleasant glow without being harsh or solventy.
