This clear, West Coast style Double IPA pours a brilliant, shiny yellow, serving as a vibrant sensory tribute. Utilizing a massive 20 g/L dry hop of Mosaic and Talus, the profile is defined by an aggressive dankness and complex layers of tropical fruit and floral aromatics. The Mosaic hops drive notes of blueberry and resinous pine, while the Talus imparts distinct pink grapefruit, dried rose petals, and sage. A lean, neutral malt backbone ensures the high bitterness remains the focus, leading to a crisp, bone-dry finish with a smooth, well-integrated alcohol warmth that underscores its potent 8% strength.
Appearance. Yellow to pale gold (4-6 SRM); brilliant clarity with a persistent, medium-sized white head and fine lacing.
Aroma. High intensity hop aroma featuring prominent dank, resinous pine, and tropical blueberry notes from Mosaic, alongside grapefruit and floral rose from Talus. Low neutral, grainy malt in the background; clean fermentation profile.
Taste. Strong hop flavors of citrus zest, tropical fruit, and pine needles. High bitterness that is firm but lacks harshness. Very low, clean, crackery malt support. The balance is heavily bitter and hop-forward, finishing very dry with a lingering resinous aftertaste.
Mouthfeel. Medium body with a smooth, slightly creamy texture. Moderate to high carbonation. Noticeable but smooth alcohol warmth; no hop-derived astringency.
