This innovative Gose transforms the traditional Romanian Zacuscă into a savory, refreshing sensory experience. On the nose, bright lactic tartness meets the earthy, roasted sweetness of red peppers and a subtle, smoky depth from the aubergines. The palate is defined by a clean, bready wheat base and a distinct yet balanced salt presence that elevates the vegetable character. The acidity is crisp and lively, cutting through the savory elements to ensure a refreshing, bone-dry finish. It is an adventurous take on the style, where the classic coriander and salt foundation provides a canvas for the complex, piquant nuances of the spread.

Appearance. Pale gold with a distinct reddish-orange hue (5-7 SRM) from the peppers; moderate haze with a frothy, off-white head that shows moderate retention and light lacing.

Aroma. Moderate to high intensity; sharp, clean lactic acidity leads, followed by the savory scent of roasted red peppers and an earthy aubergine note. Low bready wheat malt and a hint of citrusy coriander with a subtle mineral saltiness. No hop aroma.
