This Wild Specialty Beer is a vibrant collaboration showcasing the tart complexity of wild Romanian rose hips. On the nose, it offers a high-intensity blend of sharp lactic acidity and floral, tea-like rose hip aromatics, underscored by subtle earthy funk. The palate is defined by a bracing, clean sourness that amplifies the tangy, berry-like fruitiness of the rose hips, finishing bone-dry with a delicate tannic pull. Its light body and effervescent carbonation make for a refreshing yet intricate experience, where the specialty ingredients seamlessly integrate with the wild fermentation character to provide a deeply expressive and tangy profile.
Appearance. Pale amber to reddish-orange (SRM 8-12), reflecting the rose hip infusion. Moderate white to off-white head with fair retention; slight haze present from the wild fermentation and botanical adjuncts.
Aroma. High intensity; dominant lactic tartness is balanced by floral and herbal notes of dried rose hips and hibiscus. Low grainy malt sweetness. Distinctive wild aromatics including light hay and earthy Brettanomyces funk. No hop aroma.
Taste. Immediate sharp, clean sourness. The flavor of wild rose hips provides a tangy, cranberry-like fruitiness and a hint of herbal tea. Malt is minimal, providing just enough structure to support the acidity. Bitterness is very low. Finish is very dry and crisp with lingering tartness and a floral aftertaste.
Mouthfeel. Light body; high carbonation providing a prickly, refreshing sensation. No alcohol warmth at 5% ABV. Slight astringency from rose hip skins and tannins enhances the dry finish.
