A complex Brett Beer showcasing the evolution of a Witbier base through two years of maturation in Clermont Rye Whisky casks. The sensory profile is defined by a deep, rustic funk—reminiscent of wet hay and aged leather—integrated with the spicy, peppery character of rye. Notes of dried orange peel and coriander from the base beer meld with tropical Brettanomyces esters and toasted oak. The extended barrel aging introduces a subtle vanilla and spice depth, while the mixed fermentation ensures a crisp, bone-dry finish. This is a sophisticated wild ale where the wood, spirit, and microflora achieve a harmonious, farmhouse-driven elegance.
Appearance. Pours a hazy, pale straw to light gold with a fine-textured white head that shows moderate retention before settling into a persistent collar.
Aroma. High intensity with prominent barnyard, wet hay, and leathery Brettanomyces funk. These rustic notes are layered over spicy rye whisky, toasted oak, and a hint of vanilla. Subtle citrus esters and a faint floral spice from the Witbier base provide lift.
Taste. Bone dry and highly attenuated with an initial impression of peppery rye and earthy funk. The mid-palate reveals soft stone fruit and lemon zest, balanced by a light non-lactic acidity. The finish is crisp and clean, lingering with oak tannins and a touch of spicy spirit character.
Mouthfeel. Medium-light body with high, prickly carbonation that enhances the dry finish. There is a faint, well-integrated alcohol warmth from the whisky cask and a very low, pleasant oak astringency.
