This Witbier presents a sophisticated sensory profile that pushes the boundaries of the traditional Belgian style. The classic base of bready malt and creamy wheat is transformed by a vibrant infusion of bergamot, which provides an elegant, Earl Grey-like floral citrus perfume. This replaces the usual orange peel character with a deeper, more aromatic zest. A subtle addition of red pepper introduces a faint, tingling spicy warmth that complements the peppery yeast esters without overwhelming the palate. The result is a refreshing, highly carbonated ale that balances soft grain sweetness against a uniquely spiced, dry finish.
Appearance. Pale straw (3 SRM) and very cloudy with a signature milky, whitish-yellow shine. Topped by a dense, white, moussy head with excellent retention and fine lacing.
Aroma. Moderate intensity with a backbone of bready, grainy wheat and light honey. High perfumy-citrus notes from bergamot dominate, layered with lemony coriander and a subtle, spicy-sweet red pepper note. Low spicy yeast esters are present, while hop aroma is absent.
Taste. Initial bready malt sweetness is quickly met by zesty bergamot and moderate citrus fruitiness. Herbal-spicy flavors of coriander are joined by a mild, pleasant warmth from the red pepper. Low bitterness (approx. 15 IBU) provides just enough balance to keep the profile crisp. The finish is very dry and clean with a lingering floral and spicy aftertaste.
Mouthfeel. Medium-light body with a noticeably smooth and creamy texture. High carbonation provides a lively, effervescent character. No alcohol warmth or astringency is perceived.
