Appearance. Pale straw (3 SRM), brilliant clarity with high effervescence. Features a dense white head that recedes quickly due to the acidic environment, leaving minimal lacing.

Aroma. Moderately high intensity of clean lactic sourness with notes of lemon zest and tart green apple. A distinctive sweet floral aroma from the violets is present, layered over a light crackery and biscuity pale malt character. No hop aroma; clean fermentation profile.

Taste. Initial impression is a sharp, clean lactic sourness that leads into a light, bready malt flavor.
