OneTwo Raspberry Crush is a vibrant Wild Specialty Beer that masterfully balances assertive fruit and cooling botanicals. The sensory experience is dominated by an explosion of fresh, tart raspberries that blend seamlessly with a crisp, aromatic mint presence. A lively lactic acidity provides a sharp backbone, while the wild fermentation adds a subtle, earthy depth. The result is an exceptionally refreshing and crushable profile where the natural sweetness of the raspberry has been fermented into a dry, zesty finish, perfectly complemented by the lingering herbal coolness of the mint, making it a versatile choice for any season.
Appearance. Presents a striking deep pink to reddish hue (SRM 6-9) with a moderate haze. It is topped by a frothy, light pink head that dissipates relatively quickly, leaving thin lacing on the glass.
Aroma. High intensity aromatics of jammy raspberry and garden-fresh mint take center stage. These are supported by a clean, sharp lactic sourness and very low funky esters from the wild fermentation. No significant hop or malt aroma is present.
Taste. The initial impression is a burst of tart raspberry juice followed immediately by a refreshing minty coolness. A firm but bright acidity defines the mid-palate, leading to a bone-dry finish. The malt flavor is neutral and cracker-like, providing just enough structure to support the fruit and herbs. Bitterness is nearly imperceptible.
Mouthfeel. The body is light and lean, enhanced by high carbonation that creates a prickly, effervescent sensation. There is a very slight, pleasant astringency from the fruit skins and mint, with no perceptible alcohol warmth.
