This Wild Specialty Beer presents an inviting intersection of tropical vibrancy and ancient tradition. Bright, punchy aromas of fresh Passion Fruit dominate the initial impression, quickly followed by the sophisticated, earthy undertones of Pu Erh Tea. The tea provides a mellow, smooth foundation that tames the sharp acidity of the wild fermentation. On the palate, the tartness of the Passion Fruit is balanced by the mellow, woody dryness of the aged tea, creating a complex, multi-layered experience. Its refreshing nature is bolstered by a crisp finish, where the light earthy notes of the Pu Erh linger alongside a lingering tropical brightness.
Appearance. Deep gold to soft orange with a slight tropical haze. Pours with a thin, white head that dissipates fairly quickly, which is typical for the style and fruit acidity.
Aroma. High intensity aromatics of tropical Passion Fruit are front and center, supported by a distinct, earthy, and slightly woody scent from the Pu Erh Tea. A moderate lactic tartness provides a clean, sour backbone.
Taste. The initial sip delivers a sharp, refreshing Passion Fruit tartness. This transitions into a mid-palate characterized by the smooth, mellow tea flavor, which adds a drying, earthy complexity. Low bitterness allows the lactic acidity to lead into a dry, crisp finish with lingering tropical esters.
Mouthfeel. Light to medium-light body with moderate to high carbonation that enhances the refreshing qualities. Alcohol warmth is very low. A subtle, pleasant astringency from the Pu Erh Tea tannins adds structure and dryness.
