This Wild Specialty Beer offers a refreshing sensory journey through late-summer garden flavors. The profile is anchored by the juicy, watery sweetness of ripe watermelon, which is elegantly countered by the peppery, aromatic brightness of fresh basil. A sharp, clean lactic acidity provides a crisp structure, hallmark of a well-executed wild fermentation. This collaboration captures a nostalgic seasonal essence, where the botanical spice of the basil and the fruit esters of the watermelon meld into a seamless, thirst-quenching whole. The experience concludes with a bone-dry finish and a bright effervescence that cleanses the palate, leaving a lingering impression of herbal freshness.

Appearance. Pours a soft, pale gold with distinct pinkish or salmon hues (SRM 4–6) from the watermelon. Clarity is slightly hazy. The white head is moderate in height but dissipates quickly, typical of high-acid wild ales, leaving thin lacing.

Aroma. High intensity of fresh watermelon and green watermelon rind, immediately followed by a spicy, clove-like, and peppery basil herbality. A sharp lactic sourness dominates the background, with minimal grainy malt and no detectable hop aroma.

Taste. Initial impression is a bracingly sharp lactic sourness that transitions into the delicate, natural flavor of fermented watermelon. The basil provides a savory, herbal complexity on the mid-palate that balances the fruit's esters. Malt flavor is very low and crackery. The finish is exceptionally dry and clean, with an aftertaste of herbal spice and tart melon.

Mouthfeel. Light-bodied with high, prickly carbonation that enhances the perceived acidity. There is zero alcohol warmth at 5% ABV. Very low astringency from the basil, resulting in a snappy, crisp, and refreshing mouthfeel.
